Ingredients

2 cups of old-fashioned rolled oats

1/3 cup of almonds

1/3 cup of brazil nuts, chopped

¼ cup of dried apricots, chopped

¼ cup of sunflower seeds

¼ cup of pepitas (green pumpkin seeds)

2 tsp cinnamon

1 tsp cardamom

½ tsp sea salt

1/3 cup coconut oil

¼ cup honey

Directions

  • Preheat oven to 300

  • In a large bowl, combine oats, almonds, brazil nuts, sunflower seeds, pepitas, cinnamon, cardamom, and sea salt

  • In a small bowl melt coconut oil and honey in the microwave or a double boiler

  • Combine and mix well

  • Press granola onto a parchment lined baking sheet and bake for about 45 minutes or until golden brown. At the halfway point mix 

  • Once done remove from oven and add in chopped apricots

  • Allow to completely cool, then store in a glass jar at room temperature for 2-3 week

Note: get creative with this recipe. If you like almonds or cashews better than almonds add them, coconut can be added in the last 5 min of baking, dried raisins, cranberries, blueberries or even chocolate chips can be added once granola is removed from the oven. Its so easy to make it your own
