Muffins are one of my favorite things to make, especially on snowy days like today. These ones are Gluten Free and have a vegan option (chia "egg" rather then a chickens egg) and are free of all added sugars, just the natural sweetness of the ripe bananas. These muffins prove you don't need all the extra stuff to be delicious!
Banana Spice Muffins
cup Bobs Red Mill all-purpose gluten free baking flour
1 cup quinoa flour
1 cup gluten free quick oats
2 teaspoons baking powder
½ teaspoon baking soda
½ teaspoon salt
1 teaspoon ground cinnamon
1/2 teaspoon ground allspice
1/4 teaspoon ground nutmeg
Pinch ground cloves
2 very ripe bananas mashed (about 1 cup)
1 cup almond milk
1/2 cup coconut oil (melted, liquid)
1 chia "egg" or 1 egg
2 teaspoons vanilla extract Preheat the oven to 375 degrees.
In a large bowl, whisk together dry ingredients - flour, oats, baking powder, baking soda, salt, cinnamon, allspice, nutmeg, and cloves.
In another bowl combine wet ingredients - mashed bananas, milk, oil, "egg". vanilla and mix well
Combine wet and dry and whisk just until blended
Divide the batter in a lined or greased muffin tin (about 1/3 cup each)
Bake for about 20 minutes, until a toothpick (or fork which is what i used because we never have toothpicks) inserted into the center comes out clean.
Allow to cool for about five minutes in the tins, then remove and place on a wire rack to cool.
