winter citrus miso salad

Ingredients (Salad)

2 cups of arugula 

1 cup of radicchio thin sliced (1/2 for less bitter taste)

2 oranges (I used Cara Cara) segmented

1/2 sunflower seeds 

1 tbsp olive oil 

about 1 tbsp feta 


 

Ingredients (Orange Miso Dressing)

about 1/4 cup orange juice

1 tbsp lemon juice

1/3 cup extra virgin olive oil

1 small clove garlic minced

1 tsp miso paste

1/4 tsp salt


 

Directions

  • In a small pan ad olive oil and sunflower seeds and cook until fragrant and toasted (1 - 2 minutes)

  • combine all dressing ingredients, mix well and set aside

  • combine all salad ingredient including sunflower seeds, dress and mix until combine

  • Enjoy!


 

note: recipe makes additional orange miso dressing and can be stored in the fridge for up to a week
